On Friday, First Lady Michelle Obama hosted 500 chefs from all over the country on the White House lawn for the Chefs Move to Schools program, part of her larger campaign to end childhood obesity. The participating chefs will each work with a local school to help raise awareness about nutrition and healthy eating habits. In a recent online chat on the Earth Eats blog, Poppendieck addressed the connection between school food and obesity, how cafeteria food got so bad, and how we can overcome obstacles to bring healthier food to the lunchroom. “Now is the time to rethink and remake our school food system”, she said.
